I apologize for this post being a day late. I went to upload my pictures, and aaapparently my memory card was full, because only three of the 30 some pictures I took were on there. Hmmm.. I figured my camera (since it shares the same IQ as I) would let me know when the memory card was full. Well, nope, guess not. Siiiiggh.. So thus, I had to retake pictures.
Let’s move onto this delicious, low sugar treat. I was trying to concoct a thirst quenching treat for after you have sweated outside all day, without sugar overload. This is it, it fits the bill to a T.
The base of this slushie is coconut water. Coconut water can be an acquired taste, however it full of electrolytes and slightly sweet, which is the perfect for a hot summer day, perfect to server to the entire family. Add in some additional flavors of strawberry and vanilla + some sparkling water to give it a little zip and wee bit of maple syrup = a refreshing treat, that won’t have your kids bouncing off the wall, or ruin your calorie count for the day.
And believe me, this is kid tested and approved. I was super delighted how this turned out, let me know what you think!
P.S. This morning when I went to upload all my new pictures, the old pictures I had originally taken were on my SD card, go figure!! So there is a few pics from both photo shoots mixed together.
- 6 - 7 strawberries - washed, hulled and roughly chopped
- 2 cups frozen coconut water
- ⅓ cup sparking water
- 1 tbs maple syrup
- 4" of vanilla bean or 2 tsp vanilla extract
- Place all above ingredients into blender.
- Blend until smooth.
- Pour into cups. Enjoy!
